BBQ-style Cooking 1 HOSF 9372 Email to a Friend Grilling meat over an open flame is a cooking technique that requires substantial skill. Our BBQ-style Cooking 1 course teaches you to use a wide range of temperatures in order to prepare meat and fish to perfection. Work with a team to learn the essential techniques used in such recipes as BBQ pork butts, grilled whole striped bass, jerk chicken legs, char siu, grilled flank steak, slow-cooked beef chuck ribs and more. Also learn to produce a number of accompanying side dishes, including coleslaw, grilled acorn squash, chili and lime corn on the cob.
