New Nordic Cooking HOSF 9407 Email to a Friend Our New Nordic Cooking course takes a lighter, more modern approach to the traditional Scandinavian diet. Explore such Nordic food preparation methods as smoking, salting, dehydrating, fermenting and pickling. Also learn to bake that region's breads, flatbreads and crackers to complete the flavour and presentation of each dish. This cooking course gives you the opportunity to work with unique ingredients to create smoked potato purée, juniper-smoked lamb, pickled rhubarb, bark cake with caramel and cloudberry compote, meatballs, skyr with seabuckthorn, licorice micro sponge, hay-smoked oysters and more. Note(s) You must bring your full George Brown chef uniform, black safety shoes (non-slip and steel toe) and tools to the first class.
